At our house, Hubby Bryan and I recently made a dedicated effort to improve our diets, cutting out a lot of starches, snacks and sweets.
But every once in a while, a person needs a special treat, right? I have a feeling I’ll make these brownies at some point this summer, perhaps as the ending point for an outdoor gathering.
Give Me S’More Brownies
For the crust, line a square baking pan with foil so it overhangs the edge by about an inch; butter the foil. Combine 6 tablespoons melted unsalted butter, 1½ cups graham cracker crumbs, 2 tablespoons sugar and a pinch of salt. Press mixture into the bottom of the pan. Bake at 325 degrees about 20 minutes, until golden.
In a microwave safe bowl, combine 1 stick unsalted butter and 4 ounces unsweetened chocolate, chopped. Melt in microwave on 70 percent power for 2 minutes. Stir and microwave again until completely melted, about 2 minutes. Add 1 cup packed brown sugar, ¾ cup sugar, 1½ teaspoons vanilla and ½ teaspoon salt; stir to combine. Add 4 eggs and beat to make a thick bater. Add 1 cup flour; stir until just incorcoporated.
Pour the batter on top of crust. Bake for 40 to 45 minutes, until a toothpick inserted in the middle comes out mostly clean.
Remove from oven and top with 4 cups large marshmallows. Toast under the broiler until golden, about 2 minutes.
Cool. Use foil to remove brownies from the pan and cut into squares to serve.
