When I was writing about quesadillas yesterday, I had not yet wrapped my head around the fact that Cinco de Mayo was looming. Yep, the date that gives us an excuse to overindulge on margaritas, tacos and other south-of-the-border fare is tomorrow. It might be a good day to try making a batch of quesadillas, if you have never done so.
And to finish off the meal, how about some Mexican brownies? I came across this idea on the Food Network website and stashed it away with Cinco de Mayo in mind.
Cinco Celebratory Sweets
Prepare a favorite boxed mix or homemade brownies according to directions for a 9- by 13-inch pan, adding ¾ teaspoon ground chipotle chile pepper and 1 teaspoon ground cinnamon to the batter.
When cool, top each brownie with a scoop of dulce de leche ice cream and sprinkle with cinnamon.
