Deli Specialty

In my brief research on the Lincoln Del yesterday, I didn’t come across a recipe for the restaurant’s matzo ball soup, but I did find one for the chocolate pie, which if I remember correctly was a specialty.

 I’m a bit leery of the raw eggs — I would look for pasteurized ones to use in this recipe.

Lincoln Del Chocolate Pie

Cream ¼ pound butter and ¾ cup powdered sugar. Melt ¼ pound chocolate chips and add to creamed mixture. Add ½ teaspoon vanilla. Beat in 3 eggs, one at a time, into the chocolate mixture, until thoroughly combined.

Pour chocolate mixture into a baked pie shell and chill. Top with whipped cream and chocolate curls.

  1. Lincoln Del was always my pick for my out-to-eat birthday meal when I was growing up in the Twin Cities. The chocolate pie was one of my favorite desserts at Lincoln Del, along with the huge strawberry shortcake. Their matzo ball soup was delicious. I was so sad when they closed. Did you have this pie at your house yesterday? I should have stopped over for a taste after the Expo!
