Ready for ramen?

So far, I’ve only got one reader submission for the bachelor cookbook (yesterday’s blog) to provide some easy-to-make recipes for the Daily Globe’s sports editor, Aaron Hagen. I’m hoping some more of you readers come through with offerings, but in the meantime, I’m searching my own recipe inventory and keeping a lookout for other ideas.

Here’s one that makes use of typical dorm and bachelor fare — ramen noodle packets.

Ready Ramen Noodle Dinner

In a nonstick skillet, cook 1 pound ground turkey and ½ cup chopped onion until meat is browned and onion is translucent, stirring occasionally.

Add 1 cup water, one 14 ½-ounce can diced tomatoes, undrained, and the seasoning packet from one 3-ounce package chicken-flavor ramen noodle soup mix; stir to combine. Bring to a simmer and the ramen noodles, broken into pieces. Reduce heat, cover and simmer, stirring occasionally, until noodles are tender, five to six minutes.
