The end of the year is approaching, so it’s time to do a little housekeeping of my e-mail files and some random recipes that have been sent to me.
First is this variation on the “in a jar” cookie mixes, brought to my attention by Jan Stoll of Ellsworth. It would, of course, have been a great idea for holiday gifting. If it’s too late for this year, it might be worth filing away for future reference. As an appreciator of all things citrus, it sounds yummy to me.
In a quart jar with a lid, layer the following dry ingredients:
2¼ cups all-purpose flour
1 cup sugar
1 cup dried cranberries
1 tablespoon grated lemon peel
¾ teaspoon salt
¾ teaspoon baking soda
For gifting, print out the following instructions and attach to the sealed jar.
1 jar Lemon Bars dry cookie mix.
½ cup softened butter
1/3 cup thawed frozen lemonade concentrate
Preheat oven to 375 degrees. Lightly grease a 13- by 9–inch baking pan.
In a large bowl, beat butter until smooth. Beat in lemonade concentrate and egg until blended. (Mixture may appear curdled.) Add Lemon Bars dry cookie mix, to butter mixture; stir until well blended.
Press dough evenly into prepared pan. Bake 20 to 25 minutes or until golden. Cool completely in pan on wire rack. Cut into bars.
Makes about 2½ dozen bars.
