Going wild for rice

I just received some information from the Minnesota Cultivated Wild Rice Council about their new recipe brochure and a wild rice recipe contest.

The creators of selected recipes will receive two Minnesota State Fair admission tickets and three pounds of wild rice and will be featured in the 2010 State Fair Wild Rice Brochure. The recipe deemed “most popular” will receive $250 cash.

In the meantime, for some inspiration, here’s a selection from the new recipe brochure:

Sunflower Salad

4 slices bacon, cooked and crumbled

One 12-ounce package shoepeg white corn, prepared as directed on pkg, drained and chilled

3 cups cooked wild rice

1 cup diced yellow pepper

1 cup diced onion

1 cup sunflower seeds

1 cup craisins

1 can (8 oz) sliced water chestnuts, drained

2 tbsp minced fresh basil

1 cup Wee Willy’s® Italian Dressing

salt and pepper, to taste

In a large bowl, toss all ingredients. 6-8 servings.
