I blame it on snot on the brain — I forgot to post this morning.
I had hoped to make it to spring (tomorrow!) without having suffered a debilitating cold and/or flu, but it was not to be. So far this morning, I have sneezed at least 50 times and blown my nose at least 100.
But this, too, shall pass. I am confident I will feel much better tomorrow to welcome spring, although the weather forecast doesn’t sound too delightful or spring-like.
Today’s recipe on the Cookie Calendar might taste like spring, however, with its unique combination of white chocolate and orange.
White Chocolate & Orange Cookies
Preheat oven to 375 degrees. Beat ½ cup sweet butter with 1 cup superfine sugar. Add 1 egg, the grated zest of one orange and 1 teaspoon vanilla extract.
Stir together the dry ingredients: 1 ½ cups all-purpose flour, ½ teaspoon baking soda, ¼ teaspoon baking powder and ¼ teaspoon salt. Stir the dry ingredients and 8 ounces (1 ½ cups) white chocolate chips into the butter mixture and combine.
Roll dough into balls; use fingers to flatten onto a nonstick baking sheet 2 inches apart.
Bake 8 to 10 minutes; cool for 5 minutes before removing from pan.
When cool, store in an airtight container.
Makes 2 dozen.
