You’ll have to forgive my tardiness in posting today. I’ve been playing catch-up after taking a day off on Friday and then got additionally waylaid by a staff meeting.
Since I’m short on time today, it’s going to be a Recipe-at-Random day. I just opened Dot Mom’s “Mixing & Musing Cookbook” at random and found this family favorite — Graham-Caramel Bars. Actually, these bars became a specialty of a member of our extended family, Dorothy Nord. They are so simple to put together and very yummy.
Line a buttered jelly roll pan with whole graham crackers.
Boil 1 cup butter and 1 cup brown sugar for 2 minutes. Remove from heat and add 1 cup chopped nuts (I would use pecans, because that’s what I have in my freezer, but I’ve had them with almonds, too.) Spoon mixture over crackers.
Bake at 350 degrees for 7 minutes (do not overbake). After removing from oven, top with squares of one large Hershey bar. Spread when melted.
Cut bars while still warm. Set in freezer for a while to firm up chocolate. These should be store in the refrigerator.
