One of my favorite dips is the artichoke/spinach concoction that is just loaded with fat and calories. While it is occasionally worth a splurge, this healthier version sounds just as good, but only has 70 calories and 4 grams of fat per ¼ cup serving. And with New Year’s resolutions right around the corner, why not start eating healthier a day earlier?
Hot Artichoke & Spinach Dip
Preheat oven to 350 degrees.
Mix together ½ cup light mayonnaise, ½ cup fat-free plain yogurt, ½ cup grated Parmesan cheese, 3 tablespoons minced onion, 1 teaspoon chopped garlic, ½ teaspoon dried basil and 1/8 teaspoon black pepper.
Add one 10-ounce package frozen chopped spinach, thawed, drained and squeezed; and one 14-ounce can artichoke hearts, drained, rinsed and coarsely chopped. Mix until blended.
Coat a pie plate with nonstick cooking spray; spread mixture evenly in plate. Bake for 25 minutes or until heated throughout.
Serve with pita chips, raw vegetables or on small slices of whole-grain bread.
